  4. Cilantro Lime Rice. In a blend, puree one cup of fresh cilantro. Add 1/2 cup of chicken broth and puree until smooth. In a large saucepan, heat 1 cup of white risotto with 1 tablespoon oil and toast until golden. Add the pureed coriander, 1 1/2 cups broth of chicken and the juice of one lime. Bring to a boil, reduce the heat, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
